Looking for a great postpartum snacks?
This is a simple, delicious, and healthy muffin recipe that you can make ahead of time and freeze for when your new baby arrives.
In our home, it is affectionately called The Best Muffins Ever which is probably fairly close to the truth for us. I made up this recipe after much trial and error. Trying to find something healthy(ish) and tasty was not easy, but I think we finally found the right mix of ingredients! Both kid and mom approved, they thaw well and are a great snack for the early postpartum days.
Here’s the recipe:
1 1/2 cups of whole wheat flour
1 cup ground up rolled oats
1/4 cup white sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup milk
1/3-1/2 cup coconut oil (melted) (I often don’t really measure this, but I think I add closer to 1/2 cup)
1/2 tsp vanilla (optional)
1-2 bananas (mashed)
Optional add ins:
1/2 cup zucchini or carrot (peeled and grated)
Preheat oven to 350C. Bake for 15 minutes
~ Blend the oats to your preferred consistency.
~ Add all dry ingredients into a mixing bowl (flour, sugar, baking soda, baking powder, salt, oats)
~ Blend all wet ingredients together (egg, milk, bananas, coconut oil, vanilla).
~ Add wet ingredients to dry ingredients and mix. Don’t over mix.
~ Stir in add ins of choice (we like chocolate chips or blueberries).
~ Bake for 15 minutes.
